Ingredients:
- 1 cup wheat flour (atta)
- 1/2 cup ghee (clarified butter)
- 1 cup sugar
- 2 cups water or milk (you can use milk for a richer taste)
- 1/4 teaspoon cardamom powder
- 1/4 cup chopped nuts (cashews, almonds, pistachios, or a mix)
- 1/4 cup raisins (optional)
- A pinch of saffron (optional)
Instructions:
- Roasting the Wheat Flour:
- Heat a pan on medium heat and add the wheat flour (atta).
- Dry roast the flour, stirring constantly, until it turns golden brown and releases a nutty aroma. This process can take around 8-10 minutes. Be careful not to burn it.
- Preparing the Sugar Syrup:
- In a separate pan, combine the sugar and water (or milk). Bring it to a boil, stirring until the sugar dissolves completely.
- You can add a pinch of saffron to the syrup if desired, for added color and flavor.
- Making the Halwa:
- In another pan, heat the ghee on medium heat.
- Once the ghee is hot, add the roasted wheat flour and mix well. Cook for a few minutes until the mixture is well combined and has absorbed the ghee.
- Adding the Syrup:
- Slowly pour the warm sugar syrup (from step 2) into the wheat flour and ghee mixture while stirring constantly. Be careful, as it may bubble up.
- Keep stirring until the mixture thickens and starts to come away from the sides of the pan.
- Flavoring:
- Add cardamom powder, chopped nuts, and raisins (if using). Mix them into the halwa.
- Serving:
- Once the halwa has reached a thick, pudding-like consistency and all the ghee has been absorbed, remove from the heat.
- Serve warm, garnished with additional nuts or raisins.
