Ingredients:
- 1 cup suji (semolina)
- 1/2 cup ghee (clarified butter)
- 1/2 cup sugar (adjust to taste)
- 1/4 cup milk (optional, for binding)
- 1/4 cup chopped nuts (cashews, almonds, or pistachios)
- 1/4 tsp cardamom powder
- A pinch of saffron strands (optional)
- 1 tbsp raisins (optional)
Instructions:
- Roast the Suji: Heat a pan and add the suji. Dry roast it on a medium flame, stirring constantly, until it turns golden brown and gives off a nutty aroma. This should take about 5–7 minutes. Set aside.
- Prepare the Ghee and Sugar Mixture: In the same pan, add the ghee and let it melt. Once melted, add the sugar and stir until it dissolves completely. You can add the milk at this stage if you want a slightly moist texture for the ladoos.
- Mix the Suji: Add the roasted suji to the ghee and sugar mixture. Mix well so the suji absorbs the ghee and sugar evenly. Cook on low flame for 2–3 minutes.
- Add Flavorings: Sprinkle in the cardamom powder and mix. If you like, you can also add saffron strands at this stage for extra fragrance.
- Add Nuts and Raisins: Stir in the chopped nuts and raisins for added crunch and sweetness.
- Shape the Laddu: Once the mixture cools down slightly but is still warm, grease your palms with a little ghee and shape the mixture into small round ladoos.
- Serve: Allow the ladoos to cool completely before serving.
