Ingredients:
- 1 cup semolina (suji)
- 1/2 cup ghee (clarified butter)
- 1/2 cup sugar (adjust to taste)
- 2 cups water (or milk for a richer taste)
- 1/4 tsp cardamom powder (elaichi)
- A handful of cashews, almonds, and raisins (optional)
- A pinch of saffron strands (optional, for color and aroma)
Instructions:
- Roast the Suji:
- Heat 1/2 cup of ghee in a pan on medium heat.
- Add 1 cup of semolina (suji) and roast it gently while stirring continuously until it turns golden brown. This will take about 5-7 minutes. Be careful not to burn it.
- Prepare the Sugar Syrup:
- In a separate saucepan, bring 2 cups of water to a boil (or milk if you prefer a richer halwa).
- Add the sugar to the water and stir until it dissolves completely. If you like, you can also add saffron at this stage for extra flavor and color.
- Mix the Water with Suji:
- Slowly pour the hot water-sugar syrup into the roasted semolina while stirring constantly to avoid lumps.
- Stir well until the mixture thickens and the suji absorbs the liquid.
- Add Flavorings:
- Once the halwa thickens to a pudding-like consistency, add 1/4 tsp of cardamom powder for flavor.
- You can also add a handful of cashews, almonds, and raisins at this point. Fry these in a bit of ghee and add them to the halwa.
- Cook for a Few More Minutes:
- Let the halwa simmer for another 2-3 minutes, stirring occasionally, until it reaches your desired consistency.
- Serve:
- Garnish with extra fried nuts or saffron strands, if desired. Serve warm and enjoy!
Tips:
- If you want a richer taste, you can use milk instead of water.
- Adjust sugar according to your sweetness preference.
- You can add a little rose water or kewra water for a fragrant twist.
