Ingredients:
- 4 slices of white bread (preferably thick)
- 1 cup sugar
- 2 cups full-fat milk
- 1/4 cup water
- 1/2 teaspoon cardamom powder
- 2 tablespoons ghee (clarified butter)
- 10-12 cashews, chopped
- 10-12 almonds, chopped
- 10-12 pistachios, chopped
- 1 tablespoon rose water or kewra water (optional, for aroma)
- A few strands of saffron (optional)
- 1 tablespoon golden raisins (optional)
Instructions:
- Frying the Bread:
- Cut the bread slices into halves or quarters (triangular or square shapes).
- Heat ghee in a frying pan over medium heat.
- Fry the bread slices until they are golden brown and crisp. Remove them and set aside on a paper towel to drain excess ghee.
- Preparing the Milk Syrup:
- In a separate pan, add the milk and water. Bring it to a simmer over medium heat.
- Add the sugar, cardamom powder, and saffron strands (if using). Stir and cook until the sugar dissolves and the mixture thickens slightly.
- Add rose water or kewra water for extra fragrance (optional). Let it cook for another 5 minutes.
- Assembling Shahi Tukda:
- Place the fried bread slices in a serving dish.
- Pour the milk syrup over the bread pieces so they soak up the liquid. Allow the bread to absorb the syrup for 5-10 minutes.
- Garnishing:
- Heat a little ghee in a small pan and fry the chopped nuts (cashews, almonds, pistachios) and raisins until golden.
- Pour the fried nuts and raisins on top of the soaked bread.
- Serving:
- Serve the Shahi Tukda warm or chilled, garnished with the fried nuts and raisins.
