Ingredients:
- 1 cup sevai (vermicelli)
- 4 cups full-fat milk
- 1/2 cup sugar (adjust to taste)
- 1 tablespoon ghee (clarified butter)
- 4-5 green cardamom pods (crushed)
- A pinch of saffron strands (optional)
- 10-12 cashews
- 10-12 almonds (sliced)
- 5-6 pistachios (sliced)
- 1 tablespoon raisins (optional)
Instructions:
- Roast the Vermicelli:
- Heat a pan on medium flame and add the ghee.
- Once the ghee is hot, add the vermicelli (sevai) and roast it until it turns golden brown. Stir continuously to avoid burning. This should take about 4-5 minutes.
- Prepare the Milk:
- In a separate pan, bring the milk to a boil. Once the milk starts boiling, reduce the flame to a simmer and cook it for about 5-7 minutes, stirring occasionally.
- Cook the Vermicelli:
- Add the roasted vermicelli to the boiling milk. Stir well to combine.
- Let it cook on a low flame for about 10-12 minutes or until the sevai softens and the milk thickens slightly.
- Add Sugar and Flavorings:
- Once the vermicelli is cooked and the milk has thickened, add the sugar and stir until it dissolves completely.
- Add the crushed cardamom pods, saffron strands (if using), and a pinch of salt for balance.
- Fry the Nuts:
- In a small pan, heat a little ghee and fry the cashews, almonds, pistachios, and raisins until they turn golden brown. Be careful not to burn them.
- Combine and Serve:
- Add the fried nuts and raisins to the kheer. Stir to combine.
- Let the kheer simmer for another 2-3 minutes, allowing the flavors to blend.
- Serve:
- Serve hot or chilled, as per your preference. Garnish with extra nuts and a few saffron strands.
