Ingredients:
- 1 cup semolina (rava or sooji)
- 1 cup pineapple (fresh or canned, chopped into small pieces)
- 1/2 cup sugar (adjust to taste)
- 1/4 cup ghee (clarified butter)
- 1/2 cup water
- 1/2 cup milk
- 1/4 teaspoon cardamom powder
- A few cashews and almonds (optional)
- A pinch of saffron (optional)
- A few raisins (optional)
Instructions:
- Prepare the Pineapple:
- If using fresh pineapple, peel and chop it into small pieces. If using canned pineapple, drain the syrup and chop it into small chunks.
- You can blend the pineapple into a puree if you prefer a smooth texture.
- Cook the Pineapple:
- In a pan, heat 1 tablespoon of ghee. Add the pineapple pieces and sauté them for 3–4 minutes. This helps to release the flavors.
- Add 1/2 cup of water and let it cook for a few more minutes until the pineapple softens and the water reduces slightly. If you’re using pineapple puree, cook it for a little less time.
- Roast the Semolina:
- In a separate pan, heat the remaining ghee over medium heat. Add the semolina (rava) and roast it, stirring constantly, until it turns golden brown and emits a nutty fragrance. This will take about 5–7 minutes.
- Add Milk and Water:
- Once the semolina is roasted, carefully add 1/2 cup of milk and 1/2 cup of water to the pan with the semolina. Stir continuously to avoid lumps.
- Add the cooked pineapple mixture into the semolina. Stir well to combine everything.
- Sweeten the Sheera:
- Add sugar to the mixture and stir until it dissolves completely. You can adjust the sugar quantity based on your preference for sweetness.
- Add cardamom powder and saffron (if using). Stir everything together.
- Cook the Sheera:
- Let the sheera cook for 2–3 more minutes on low heat until it thickens to your desired consistency.
- Add the nuts (cashews, almonds, raisins) and stir well.
- Serve:
- Once the sheera is ready, remove it from the heat and let it sit for a couple of minutes. Serve warm, garnished with extra nuts or a few extra pineapple pieces, if desired.
