Ingredients:
- 1/4 cup basmati rice (or any long-grain rice)
- 4 cups full-fat milk
- 1/2 cup sugar (adjust to taste)
- 1/2 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, pistachios, or cashews)
- A pinch of saffron threads (optional)
- 1 tablespoon rose water (optional)
- A pinch of salt
Instructions:
- Rinse the Rice:
- Wash the rice thoroughly and soak it in water for about 30 minutes. Drain the water before using.
- Prepare Milk Mixture:
- In a heavy-bottomed pan, bring the milk to a boil over medium heat. Stir occasionally to prevent the milk from burning.
- Cook the Rice:
- Once the milk starts boiling, add the soaked rice. Reduce the heat to low and let it simmer. Stir frequently to prevent the rice from sticking to the bottom. Cook the rice until it becomes soft and the mixture thickens (about 15-20 minutes).
- Add Sugar and Flavoring:
- When the rice is soft, add sugar, cardamom powder, and saffron (if using). Stir well and continue to simmer for another 5-7 minutes until the phirani thickens to a pudding-like consistency.
- Add Rose Water (Optional):
- If using rose water, add it just before removing the pan from heat for a fragrant touch.
- Garnish:
- Pour the phirani into serving bowls. Garnish with chopped nuts of your choice and a few saffron strands for color and flavor.
- Serve:
- Phirani can be served warm or chilled, depending on your preference.
