Ingredients:
- Besan (gram flour) – 1 cup
- Ghee (clarified butter) – 1/2 cup
- Sugar – 3/4 cup (adjust to taste)
- Water – 1/2 cup
- Milk – 1/4 cup
- Cardamom powder – 1/2 tsp
- Chopped nuts (optional: cashews, almonds, pistachios) – 2 tbsp
- Saffron strands (optional) – a pinch
- Rosewater or kewra water (optional) – 1 tsp for aroma
Instructions:
- Prepare the Ghee:
- Heat 1/2 cup ghee in a heavy-bottomed pan over medium heat.
- Roast the Besan:
- Add 1 cup of besan to the ghee and roast it on low-medium heat. Stir continuously to avoid burning. Roast the besan for about 10–12 minutes until it turns golden brown and you get a fragrant aroma.
- Make the Sugar Syrup:
- In another pan, combine the sugar, 1/2 cup water, and 1/4 cup milk. Bring it to a boil.
- Once the sugar dissolves, simmer the syrup for 5–7 minutes until it reaches a one-thread consistency (when you drop a small amount between your thumb and index finger, it forms a single thread).
- Combine Syrup and Besan:
- Once the besan is roasted, add the sugar syrup to the roasted besan slowly while stirring. Be careful as the mixture will splatter initially.
- Keep stirring the mixture until it thickens and starts to come together.
- Add Flavorings:
- Add cardamom powder and chopped nuts (optional) to the mixture. Stir well.
- If you’re using saffron, soak the strands in warm milk and add them to the mixture. Add rosewater or kewra water for additional fragrance if desired.
- Set the Mohanthal:
- Grease a tray or a plate with ghee. Transfer the mixture to the greased plate and flatten it out with a spatula.
- Let it cool for about 15–20 minutes, then cut it into squares or diamond shapes.
- Serve:
- Allow the Mohanthal to cool completely. Once set, enjoy the rich, delicious sweet!

- Consistency: The key to perfect Mohanthal is getting the right consistency for the sugar syrup. Too thin or too thick syrup can affect the texture of the sweet.
- Flavoring: You can add a little bit of rosewater, kewra water, or a pinch of saffron to enhance the aroma of the dish.
