Ingredients:
- 1 cup cracked wheat (dalia)
- 2 tablespoons ghee (clarified butter)
- 1/4 cup sugar (adjust to taste)
- 2 cups water or milk (or a mix of both)
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (cashews, almonds, or pistachios)
- 1 tablespoon raisins (optional)
- A pinch of saffron strands (optional)
- 1 tablespoon grated coconut (optional)
Instructions:
- Roast the Cracked Wheat:
- Heat ghee in a pan over medium heat.
- Add the cracked wheat and roast it until it turns slightly golden and releases a nutty aroma (about 4-5 minutes). Stir constantly to avoid burning.
- Prepare the Sweet Base:
- In a separate saucepan, bring the water (or milk) to a boil. If using saffron, soak the strands in a tablespoon of warm milk and add them to the boiling mixture.
- Add sugar to the boiling water or milk and stir until it dissolves completely.
- Combine Wheat and Liquid:
- Gradually add the boiling water or milk mixture to the roasted cracked wheat while stirring constantly.
- Reduce the heat to low, cover the pan, and let it cook for about 10-15 minutes until the wheat is soft and has absorbed most of the liquid.
- Add Flavorings:
- Once the wheat is cooked, add cardamom powder, chopped nuts, raisins, and any optional ingredients like grated coconut.
- Stir well and cook for another 2-3 minutes, allowing the flavors to meld together.
- Serve:
- Serve the lapsi hot, garnished with additional nuts or a sprinkle of cardamom powder if desired.
This dish is comforting, rich, and satisfying. You can adjust the sweetness and consistency to your preference by adding more or less sugar and liquid.
