Ingredients:
For the Dough:
- 2 cups all-purpose flour (maida)
- 2 tbsp semolina (rava)
- 2 tbsp ghee (clarified butter)
- A pinch of salt
- Water (as required to knead dough)
For the Filling:
- 1 ½ cups khoya (mawa), grated
- ½ cup grated coconut (fresh or desiccated)
- ½ cup sugar (adjust to taste)
- 2 tbsp chopped almonds
- 2 tbsp chopped cashews
- 2 tbsp chopped pistachios
- 1 tsp cardamom powder
- 1 tbsp melon seeds (optional)
- 2 tbsp ghee (for roasting)
For Frying:
- Ghee or oil (for deep frying)
Instructions:
1. Prepare the Dough:
- In a large bowl, mix the flour, semolina, and a pinch of salt. Add the ghee and rub it into the flour mixture until it becomes crumbly.
- Gradually add water and knead it into a smooth, firm dough. Cover it with a damp cloth and set it aside for 30 minutes.
2. Prepare the Filling:
- Heat ghee in a pan and add the grated khoya. Cook on low heat, stirring continuously, until it becomes slightly golden.
- Add grated coconut, cardamom powder, and sugar to the pan. Mix well.
- Add chopped dry fruits and melon seeds (if using) and continue cooking for another 2-3 minutes.
- Let the mixture cool to room temperature.
3. Shape the Gujia:
- Divide the dough into small, equal-sized balls (about the size of a small lemon).
- Roll each ball into a small, thin circle (around 3-4 inches in diameter) using a rolling pin.
- Place a spoonful of the prepared filling in the center of each circle.
- Fold the dough in half to form a half-moon shape, pinching the edges to seal the gujia tightly. You can use a fork to press along the edges to make a pattern, or shape it with a gujia mold.
4. Fry the Gujia:
- Heat ghee or oil in a deep frying pan on medium heat.
- Gently slide the gujias into the hot oil and fry in batches, turning them occasionally, until they are golden brown and crispy.
- Remove the gujias from the oil and place them on paper towels to absorb excess oil.
5. Serve:
- Allow the gujias to cool before serving. They can be stored in an airtight container for up to a week.
