Fruit Custard – Jagruti Pujari

Ingredients:

  • 1 cup mixed fruits (e.g., apple, banana, mango, pomegranate, grapes, or any of your choice)
  • 2 cups milk
  • 2 tablespoons custard powder (vanilla flavor)
  • 4 tablespoons sugar (adjust as per taste)
  • 1/4 teaspoon cardamom powder (optional)
  • A pinch of saffron strands (optional for color and aroma)

Instructions:

  1. Prepare the Custard Base:
    • In a small bowl, mix 2 tablespoons of custard powder with a little milk (about 1/4 cup) to make a smooth paste.
    • Heat the remaining milk in a saucepan over medium heat. Once it begins to warm up, add the custard paste to the milk.
    • Stir constantly to avoid lumps. Add sugar and continue stirring until the mixture thickens to a custard-like consistency. This will take about 5-7 minutes.
    • If desired, add a pinch of cardamom powder or saffron strands for extra flavor.
    • Once thickened, remove from heat and allow it to cool down to room temperature.
  2. Prepare the Fruits:
    • While the custard cools, wash, peel (if necessary), and chop the fruits into small bite-sized pieces. You can use a mix of your favorite fruits.
    • Place the chopped fruits in a bowl.
  3. Combine:
    • Once the custard has cooled, pour it over the chopped fruits. Gently mix to combine, ensuring the fruits are evenly coated with the custard.
  4. Serve:
    • You can serve the fruit custard chilled, or at room temperature, depending on your preference.
    • Garnish with some extra fruits on top for a colorful look.
