Ingredients:

- 1 cup grated fresh coconut
- 1/2 cup jaggery (grated or powdered)

Instructions:
1. Prepare the Filling:
- Heat a pan on medium flame and add the grated coconut.
- Add jaggery and mix well. Cook until the jaggery melts and combines with the coconut.
- Stir continuously to avoid burning and cook until the mixture thickens slightly.
- Add cardamom powder, nuts, and raisins. Mix well.
- Remove from heat and let it cool.
2. Prepare the Dough:
- In a mixing bowl, combine all-purpose flour, ghee, and a pinch of salt.
- Gradually add water and knead into a firm yet smooth dough.
- Cover with a damp cloth and let it rest for 20-30 minutes.
3. Shape the Modak:
- Divide the dough into small balls.
- Roll each ball into a small circle (3-4 inches in diameter) using a rolling pin.
- Place a spoonful of the prepared filling in the center.
- Gently gather the edges and pleat them, bringing them together at the top to seal the modak. Pinch to close.
4. Fry the Modak:
- Heat oil in a deep pan on medium heat.
- Once the oil is hot, reduce the flame to medium-low to prevent burning.
- Gently slide a few modaks into the oil and fry until golden brown, turning occasionally.
- Remove with a slotted spoon and place them on a paper towel to drain excess oil.
