Ingredients:
For the Falooda Base:
- 2 tablespoons falooda sev (vermicelli) or thin rice noodles
- 2 cups milk
- 2 tablespoons sugar (adjust to taste)
- 1 teaspoon rose syrup (or more, for flavor and color)
- 2 tablespoons basil seeds (sabja/tukmaria), soaked in water for 20 minutes
- 2-3 scoops of vanilla or kulfi ice cream
Optional Toppings:
- Chopped nuts (pistachios, almonds)
- Chopped fruits (mango, banana, or strawberries)
- Jelly cubes (optional)
- Whipped cream (optional)
Instructions:
- Prepare the Basil Seeds:
- Soak the basil seeds in a bowl of water for about 20 minutes. Once they swell up and become gelatinous, drain and set aside.
- Cook the Vermicelli:
- Boil 1-2 cups of water in a pot.
- Add the falooda sev or thin vermicelli and cook until soft. This usually takes about 3-5 minutes. Drain and rinse with cold water. Set aside.
- Sweeten the Milk:
- In a saucepan, heat milk and sugar over medium heat. Stir until the sugar dissolves completely.
- Chill the sweetened milk in the refrigerator until cold.
- Assemble the Falooda:
- In a tall glass, layer the following:
- A tablespoon of rose syrup.
- A layer of soaked basil seeds.
- A layer of cooked vermicelli.
- Pour the chilled sweetened milk on top.
- Add a scoop (or two!) of ice cream.
- Drizzle more rose syrup over the ice cream for extra flavor and garnish with nuts or fruits if desired.
- In a tall glass, layer the following:
- Serve:
- Serve immediately with a straw and a spoon for a visually stunning and tasty treat!
