Ingredients:
- 2 cups fresh grated coconut (or desiccated coconut)
- 1 cup sweetened condensed milk
- ½ cup sugar (adjust according to taste)
- 1 teaspoon cardamom powder
- 2 tablespoons ghee (clarified butter)
- A few strands of saffron (optional, for aroma and color)
- 2 tablespoons chopped nuts (almonds, pistachios, or cashews for garnish)
Instructions:
- Prepare the Ingredients:
If using desiccated coconut, lightly moisten it by sprinkling a few drops of milk or water. If using fresh coconut, ensure it’s grated finely. - Heat the Pan:
In a non-stick pan, heat the ghee over medium heat. - Cook the Coconut:
Add the grated coconut and sauté for 2-3 minutes to remove rawness. Stir continuously to avoid burning. - Add Sweeteners:
Pour in the condensed milk and mix well. Add the sugar and stir until it dissolves completely. - Flavoring:
Add cardamom powder and saffron (if using). Mix thoroughly and cook the mixture on low heat, stirring constantly, until it thickens and starts leaving the sides of the pan. This will take around 10-12 minutes. - Shape the Barfi:
Grease a square or rectangular tray with ghee. Transfer the coconut mixture into the tray and spread it evenly using a spatula. Press gently to smoothen the surface. - Garnish:
Sprinkle chopped nuts on top and press them lightly into the mixture. - Cool and Cut:
Allow the barfi to cool completely at room temperature (or refrigerate for faster setting). Once set, cut it into squares or diamonds. - Serve:
Serve the coconut barfi as a dessert or festive treat. Store leftovers in an airtight container for up to a week.
