Ingredients:
- Carrots: 500 grams (grated)
- Milk: 2 cups (preferably full-fat)
- Sugar: 3/4 cup (adjust to taste)
- Ghee (clarified butter): 3 tablespoons
- Cardamom powder: 1/2 teaspoon
- Cashews: 8-10 (chopped)
- Almonds: 8-10 (sliced)
- Raisins: 2 tablespoons
Instructions:
Step 1: Prepare Carrots
- Wash, peel, and grate the carrots.
Step 2: Cook in Milk
- Heat a heavy-bottomed pan or kadhai on medium heat.
- Add the grated carrots and sauté them in 1 tablespoon of ghee for 3-4 minutes.
- Pour in the milk, mix well, and let it simmer. Cook on medium heat, stirring occasionally, until the milk reduces and thickens. This may take about 15-20 minutes.
Step 3: Add Sugar and Ghee
- Add the sugar and mix well. The mixture will become slightly liquidy again as the sugar dissolves.
- Cook until the mixture thickens and the sugar is fully absorbed.
- Add the remaining ghee and continue to sauté the mixture, stirring frequently, for 5-7 minutes. The halwa should start leaving the sides of the pan.
Step 4: Add Flavors and Nuts
- Stir in the cardamom powder for flavor.
- Add the chopped cashews, almonds, and raisins, reserving some for garnishing. Mix well.
Step 5: Serve
- Garnish with reserved nuts and serve warm.
Tips:
- Use fresh, tender, and juicy carrots for the best results.
- You can adjust the sugar based on the sweetness of the carrots.
- For a richer version, substitute a portion of milk with condensed milk.
