Carrot Halwa – Jahnavi Mukadam

Ingredients:

  • Carrots: 500 grams (grated)
  • Milk: 2 cups (preferably full-fat)
  • Sugar: 3/4 cup (adjust to taste)
  • Ghee (clarified butter): 3 tablespoons
  • Cardamom powder: 1/2 teaspoon
  • Cashews: 8-10 (chopped)
  • Almonds: 8-10 (sliced)
  • Raisins: 2 tablespoons

Instructions:

Step 1: Prepare Carrots

  1. Wash, peel, and grate the carrots.

Step 2: Cook in Milk

  1. Heat a heavy-bottomed pan or kadhai on medium heat.
  2. Add the grated carrots and sauté them in 1 tablespoon of ghee for 3-4 minutes.
  3. Pour in the milk, mix well, and let it simmer. Cook on medium heat, stirring occasionally, until the milk reduces and thickens. This may take about 15-20 minutes.

Step 3: Add Sugar and Ghee

  1. Add the sugar and mix well. The mixture will become slightly liquidy again as the sugar dissolves.
  2. Cook until the mixture thickens and the sugar is fully absorbed.
  3. Add the remaining ghee and continue to sauté the mixture, stirring frequently, for 5-7 minutes. The halwa should start leaving the sides of the pan.

Step 4: Add Flavors and Nuts

  1. Stir in the cardamom powder for flavor.
  2. Add the chopped cashews, almonds, and raisins, reserving some for garnishing. Mix well.

Step 5: Serve

  1. Garnish with reserved nuts and serve warm.

Tips:

  • Use fresh, tender, and juicy carrots for the best results.
  • You can adjust the sugar based on the sweetness of the carrots.
  • For a richer version, substitute a portion of milk with condensed milk.
