Ingredients:
- 1 cup almonds (badam), blanched and peeled
- 1 cup sugar
- A pinch of cardamom powder
- Ghee (clarified butter) for frying
- Water for making sugar syrup
Instructions:
- Make Almond Paste:
- Grind the blanched and peeled almonds into a smooth paste using a food processor or blender. Add a little water if needed.
- Prepare Sugar Syrup:
- In a separate pan, make a sugar syrup by dissolving sugar in water over low heat. Once the sugar dissolves completely, bring it to a boil and then simmer until it reaches a one-string consistency.
- Add Almond Paste:
- Add the almond paste to the sugar syrup and cook on low heat. Stir continuously to avoid lumps.
- Add Cardamom Powder:
- Once the almond-sugar mixture thickens and starts leaving the sides of the pan, add a pinch of cardamom powder for flavor.
- Cook Until Dough-like Consistency:
- Continue cooking and stirring until the mixture attains a dough-like consistency. It should be thick and easy to handle.
- Shape into Puris:
- Allow the mixture to cool slightly. Grease your hands with ghee and shape small portions of the mixture into round puris.
- Fry:
- Heat ghee in a pan. Fry the almond puris until they turn golden brown. Make sure to fry on medium heat to ensure even cooking.
- Drain Excess Ghee:
- Remove the fried badam puris from the pan and place them on absorbent paper to drain excess ghee.
- Cool and Serve:
- Allow the Badam Puris to cool completely before serving.
