Badam Puri – Gargi Ambedkar

Ingredients:

  • 1 cup almonds (badam), blanched and peeled
  • 1 cup sugar
  • A pinch of cardamom powder
  • Ghee (clarified butter) for frying
  • Water for making sugar syrup

Instructions:

  1. Make Almond Paste:
    • Grind the blanched and peeled almonds into a smooth paste using a food processor or blender. Add a little water if needed.
  2. Prepare Sugar Syrup:
    • In a separate pan, make a sugar syrup by dissolving sugar in water over low heat. Once the sugar dissolves completely, bring it to a boil and then simmer until it reaches a one-string consistency.
  3. Add Almond Paste:
    • Add the almond paste to the sugar syrup and cook on low heat. Stir continuously to avoid lumps.
  4. Add Cardamom Powder:
    • Once the almond-sugar mixture thickens and starts leaving the sides of the pan, add a pinch of cardamom powder for flavor.
  5. Cook Until Dough-like Consistency:
    • Continue cooking and stirring until the mixture attains a dough-like consistency. It should be thick and easy to handle.
  6. Shape into Puris:
    • Allow the mixture to cool slightly. Grease your hands with ghee and shape small portions of the mixture into round puris.
  7. Fry:
    • Heat ghee in a pan. Fry the almond puris until they turn golden brown. Make sure to fry on medium heat to ensure even cooking.
  8. Drain Excess Ghee:
    • Remove the fried badam puris from the pan and place them on absorbent paper to drain excess ghee.
  9. Cool and Serve:
    • Allow the Badam Puris to cool completely before serving.
